iPads have been designed to be easy to use, and accessing all of the iPad running apps really is very simple indeed. A quick double click on the Home button will let you see which of your apps are running in the bar along the bottom of the screen, and if you want to switch to a different running app just tap on it on the bar. A quick swipe downwards on the screen will hide the bar again.
